Aunt Betty’s Rolls
2 cups milk - Scalded and cooled
1/2 cup sugar
2 eggs
1 cup warm water
2 pkgs. yeast (2 T)
7 cups flour
1 t salt

Mix all liquid ingredients, including yeast, in large bowl. Add salt and flour gradually. Knead until dough is smooth, you may need to add a bit more flour. Form into rolls. Let rise for about 45 minutes. Bake at 350 F until tops are golden brown.

This recipe makes great rolls as well as cinnamon pull apart.

**To make the cinnamon pull-apart, form small dough balls. Dip them in melted butter or margarine. Roll the dough balls in a cinnamon sugar mixture. Prop them into an angel food cake pan or Bundt pan. Let the dough balls rise for about 45 minutes. Bake at 350 F until the top is golden brown.

Invert on a large plate. While still warm drizzle top with glaze mixture.

Sugar Glaze
2 cups powdered sugar
1/4 cup hot water
1 tsp. butter

Mix ingredients until well blended.

Jim-Dandy Muffins
1 2/3 cup flour 1/8 teaspoon nutmeg or cinnamon
1/2 cup sugar 1/3 cup shortening
2 teaspoon baking powder 3/4 cup milk
1/2 teaspoon salt 1 egg
Apricot jam and chopped nuts  

Preheat oven to 400 degrees. In a mixing bowl, combine flour, sugar, baking powder, salt nutmeg. Cut in shortening until particles are fine. Add milk and egg; mix just until thoroughly blended. Spoon into greased muffin cups. Place 1 teaspoon jam on top of each muffin, pressing into batter slightly, sprinkle with a few chopped nuts. Bake for 20-25 minutes until tops spring back. Reduce baking powder to 1 t. for hi alt. (5200ft)


Basic Crepes
2 eggs
1 cup milk
1 cup flour
1/4 teaspoon salt
2 tablespoon melted butter

If preferred sweet, add 2 tablespoon sugar.

Blend in blender and cook in a crepe pan or a frying pan. Crepes are very thin and pancake-like, except you roll them up like a tortilla with fillings inside. You may fill them with jams, fruit, peanut butter, meat, etc. Top with sauces or whipped cream if desired. Use as a main course, side or dessert.


Zucchini Bread
3 eggs 1 t. salt
2 c. sugar 1 t. soda
1 c. veg. oil 1/4 t. baking powder
2 c. grated raw zucchini 3 t. cinnamon
3 t. vanilla 3 c. whole wheat flour

1) Beat eggs

2) Add sugar and oil to eggs

3) Add zucchini and vanilla

4) Combine together and add to above: salt, soda, baking powder, cinnamon, flour

5) Grease 2 loaf pans and fill.

6) Bake 1 hour at 350 degrees F.
